An introductory course in human nutrition. Topics include digestion, absorption, metabolism, and biological functions of nutrients; nutrition needs throughout the life cycle; relationship of nutrition and eating patterns to health and disease; individual and societal influences on food choices; and the role of government in food safety and security.
